Olive Oil Storage FAQ
Why is nitrogen used in olive oil storage?
The contact of olive oil with air (oxygen) triggers rancidity. Since nitrogen gas is heavier than air, when pumped into the tank, it creates a protective cushion over the oil.
Should I choose a conical bottom or a flat bottom?
To rest unfiltered (fresh) olive oil, fully conical bottom tanks collect the sediment at a single point and provide easy discharge. For filtered oils, large tonnage flat-bottomed tanks are suitable.
